Quinoa Salad

  

Quinoa 


Fun and Versatile...Goes well with any dish. Enjoyable anytime of the day; Breakfast, Lunch or Dinner. 
Here is one of my favorite salads.. Make it, share it with friends and family! It is delicious and
super easy to prepare.

Ingredients

2   cups cooked quinoa
1   low sodium chickpeas can  
1   small carrot shredded 
1   stalk celery chopped
1   small yellow onion diced
2   garlic cloves minced 
 2   plum tomatoes diced
1   tbsp miso paste
 avocado
 tbsp apple cider vinegar 
2   tbsp cold press extra virgin olive oil
1/4    bunch fresh cilantro chopped
1/2   cucumber sliced and seeds removed
1/2   red bell pepper diced
     the juice of one lemon
     sea salt & black pepper to taste

Preparation

Combine olive oil, miso, lemon juice, salt and black pepper, mix thoroughly. Add this dressing to the rest of the Ingredients. Garnish it with red peppers, avocado & cucumber slices.
